Fresh Italian Cucumber Salad Recipe

This Italian cucumber salad recipe is one I almost always have in my fridge. And it’s made with dill I cut straight from the patio.

I walk out to the patio, pinch off what I need, and before I even get back inside, the smell is already on my hands. Fresh, earthy, and a little sharp. I have been growing dill for a few years, and that smell still makes my heart sing every single time.

The recipe is diced cucumbers, tomato, bell pepper, red onion, salami, cheddar, fresh herb, parmesan cheese, and Italian dressing. You let it sit for a bit, and the cucumbers soften and soak up the dressing. It is also versatile!

You can add or substitute veggies you have on hand and love. You can also make your own Italian dressing with oil, vinegar, and seasonings.

I typically use this recipe as a side dish for lunches or dinners in the Spring and Summer months! It’s quick, fresh, and delicious, and goes with so many things, especially during grilling and garden season.

Fresh Italian Cucumber Salad Recipe

Ingredients:

Approximate Serving Size: 6-8

1-2 cucumbers, diced

1 Roma tomato, diced

1/4 cup bell pepper, diced

1/4 cup red onion, diced

1/4 cup salami, cubed

4 oz medium cheddar, cubed

1/4 cup parmesan cheese

1/4 cup Italian Dressing (add more if you like it saucy) *my fav

handful of fresh dill, roughly chopped

Pinch of salt and pepper

Optional: a pinch of Italian seasoning, a pinch of garlic powder

Instructions:

Chop veggies, salami, cheese, and herbs, and add everything to a bowl. Add the Italian dressing, Parmesan cheese, and seasonings. Toss thoroughly. Let it sit for at least 15 minutes so the cucumbers start to soften and the flavors develop. Add more dressing and/ or seasoning to taste. I usually measure with the heart 🙂

Keeps in the fridge for about two days. Gets better the longer it sits, up to a point.
